Corvina Columbiana (seared halibut with fennel tomato sauce)
Halibut, Ají Amarillo peppers, fennel, onions, tomatoes, black olives, basil, thyme, and coconut milk.
Camote rostizado (roasted sweet potatoes) 
Sweet potatoes, cinnamon, oil, and paprika.
Ensalada de naranja y jicama (orange and jicama salad)
Spinach, oranges, pineapples, and jicama with lemon-orange vinaigrette (garlic and olive oil).
I wish I still worked on the main Apple campus and could eat like this every day.
